Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 3 tablespoons ghee
  • 1 cinnamon stick
  • 2-3 green cardamom pods
  • 1 bay leaf
  • 1 teaspoon cumin seeds
  • 1 onion, sliced
  • 2-3 cloves garlic, minced
  • Salt to taste

Equipment

  • A medium-sized pot with a lid
  • A wooden spoon
  • A knife and cutting board

Method

  1. Wash the rice in cold water until the water runs clear. Drain and set aside.
  2. Heat the ghee in a pot over medium heat. Add the whole spices (cinnamon stick, cardamom pods, bay leaf and cumin seeds) and sauté for a minute or two until fragrant.
  3. Add the sliced onion and minced garlic to the pot and sauté for a few more minutes until the onion is translucent.
  4. Add the rice to the pot and stir to coat it with the ghee and spices.
  5. Add the water and salt to the pot and bring it to a boil.
  6. Once the water is boiling, reduce the heat to low and cover the pot with a lid.
  7. Cook the rice on low heat for 15-20 minutes or until all the water is absorbed and the rice is cooked through.
  8. Remove the pot from the heat and let it sit for 5-10 minutes to allow the rice to steam.
  9. Fluff the rice with a fork and remove the whole spices (cinnamon stick, cardamom pods and bay leaf) before serving.
  10. Serve hot with your favorite curry or side dish.

Notes

  • You can add more or less water depending on how soft or firm you like your rice.
  • You can also add other whole spices like cloves or star anise to add more flavor to the dish.
  • If you don't have ghee, you can substitute it with butter or oil.
