- 1 cup basmati rice
- 2 cups water
- 3 tablespoons ghee
- 1 cinnamon stick
- 2-3 green cardamom pods
- 1 bay leaf
- 1 teaspoon cumin seeds
- 1 onion, sliced
- 2-3 cloves garlic, minced
- Salt to taste
Equipment
- A medium-sized pot with a lid
- A wooden spoon
- A knife and cutting board
Method
- Wash the rice in cold water until the water runs clear. Drain and set aside.
- Heat the ghee in a pot over medium heat. Add the whole spices (cinnamon stick, cardamom pods, bay leaf and cumin seeds) and sauté for a minute or two until fragrant.
- Add the sliced onion and minced garlic to the pot and sauté for a few more minutes until the onion is translucent.
- Add the rice to the pot and stir to coat it with the ghee and spices.
- Add the water and salt to the pot and bring it to a boil.
- Once the water is boiling, reduce the heat to low and cover the pot with a lid.
- Cook the rice on low heat for 15-20 minutes or until all the water is absorbed and the rice is cooked through.
- Remove the pot from the heat and let it sit for 5-10 minutes to allow the rice to steam.
- Fluff the rice with a fork and remove the whole spices (cinnamon stick, cardamom pods and bay leaf) before serving.
- Serve hot with your favorite curry or side dish.
Notes
- You can add more or less water depending on how soft or firm you like your rice.
- You can also add other whole spices like cloves or star anise to add more flavor to the dish.
- If you don't have ghee, you can substitute it with butter or oil.
