Here are the ingredients you will need to make chitrana rice:- 1 cup of rice
- 2 cups of water
- 1 tablespoon of peanuts
- 1 tablespoon of chana dal
- 1 tablespoon of urad dal
- 1 teaspoon of mustard seeds
- 1 teaspoon of cumin seeds
- 1-2 dried red chilies
- 1/4 teaspoon of turmeric powder
- 1/2 teaspoon of salt
- 2 tablespoons of oil
- 1 tablespoon of lemon juice
- 2 tablespoons of chopped coriander leaves

Method
Follow these steps to make chitrana rice:- Wash 1 cup of rice and soak it in water for 30 minutes.
- Drain the water and add the rice to a pressure cooker or rice cooker along with 2 cups of water. Cook the rice until it is done.
- Heat 2 tablespoons of oil in a frying pan over medium heat.
- Add 1 tablespoon of peanuts and fry them until they are golden brown.
- Add 1 tablespoon of chana dal, 1 tablespoon of urad dal, 1 teaspoon of mustard seeds, and 1 teaspoon of cumin seeds to the pan. Fry them until the mustard seeds start to pop.
- Add 1-2 dried red chilies, 1/4 teaspoon of turmeric powder, and 1/2 teaspoon of salt to the pan. Fry for a few seconds.
- Turn off the heat and add 1 tablespoon of lemon juice to the pan.
- Once the rice is cooked, transfer it to a bowl and add the spice mixture to the rice. Mix well.
- Garnish with 2 tablespoons of chopped coriander leaves.
- Chitrana rice is ready to serve!
