Method

1. Rinse the rice in a fine-mesh strainer under cold running water until the water runs clear. 2. Heat the vegetable oil in a large saucepan over medium heat. 3. Add the onion and red bell pepper and sauté for 5 minutes until they are soft and translucent. 4. Add the garlic, cumin, coriander, turmeric, and saffron and sauté for another 2 minutes until fragrant. 5. Add the rice to the pan and stir to coat it in the spice mixture. 6. Add the chicken or vegetable broth and bring to a boil. 7. Reduce the heat to low and cover the pan with a lid. 8. Simmer the rice for 18-20 minutes until the liquid is absorbed and the rice is tender. 9. Remove the pan from the heat and let it sit covered for 5 minutes. 10. Fluff the rice with a fork and season with salt and pepper to taste.

Notes

- You can also add peas or corn to the rice for extra flavor and color. - If you don't have saffron on hand, you can leave it out or substitute with a pinch of ground turmeric.
