- 1 tbsp. red chili powder
- 1 tbsp. coriander powder
- 1 tbsp. cumin powder
- 1 tbsp. turmeric powder
- 1 tbsp. garam masala powder
- 2 tbsp. soy sauce
- 2 tbsp. vinegar
- 4 tbsp. oil
- Salt to taste
- Water as required

- Wok or frying pan

Method
- Wash and soak the rice in water for about 15 minutes.
- Heat oil in a pot and add chopped onion. Sauté until golden brown.
- Add ginger and garlic paste and sauté for another minute.
- Add chicken, salt, and all the spices. Cook until the chicken is tender.
- Add carrots and peas and cook until vegetables are tender.
- Add soy sauce and vinegar and cook for another 2 minutes.
- In a separate pot, boil enough water and add rice. Cook until the rice is 70% done.
- Drain the rice and add it to the chicken mixture. Mix well.
- Cover the pot with a tight lid and cook on low heat for about 10-15 minutes or until the rice is fully cooked.
- Garnish with fresh coriander and serve hot.

- It is important to soak the rice before cooking to ensure that the grains are fluffy and do not stick together.
- If you do not have a tight lid for the pot, you can use aluminum foil to cover the pot tightly.
