Ingredients

  • 1 kg chicken
  • 2 cups basmati rice

  • 1 tbsp. garlic paste
  • 1 tbsp. red chili powder
  • 1 tbsp. coriander powder
  • 1 tbsp. cumin powder
  • 1 tbsp. turmeric powder
  • 1 tbsp. garam masala powder
  • 2 tbsp. soy sauce
  • 2 tbsp. vinegar
  • 4 tbsp. oil
  • Salt to taste
  • Water as required

Equipment

  • Large pot
  • Wok or frying pan
  • Spatula
  • Cutting board
  • Knife

Method

  1. Wash and soak the rice in water for about 15 minutes.
  2. Heat oil in a pot and add chopped onion. Sauté until golden brown.
  3. Add ginger and garlic paste and sauté for another minute.
  4. Add chicken, salt, and all the spices. Cook until the chicken is tender.
  5. Add carrots and peas and cook until vegetables are tender.
  6. Add soy sauce and vinegar and cook for another 2 minutes.
  7. In a separate pot, boil enough water and add rice. Cook until the rice is 70% done.
  8. Drain the rice and add it to the chicken mixture. Mix well.
  9. Cover the pot with a tight lid and cook on low heat for about 10-15 minutes or until the rice is fully cooked.
  10. Garnish with fresh coriander and serve hot.

Notes

  • It is important to soak the rice before cooking to ensure that the grains are fluffy and do not stick together.
  • If you do not have a tight lid for the pot, you can use aluminum foil to cover the pot tightly.
  • You can adjust the spice level according to your taste by adding more or less red chili powder.
