- 1 cup of long-grain white rice
- 2 cups of water
- 1 chipotle pepper in adobo sauce, finely chopped
- 1 tablespoon of adobo sauce
- 1 tablespoon of olive oil
- 2 garlic cloves, minced
- 1 tablespoon of lime juice
- 1/4 cup of fresh cilantro, roughly chopped
- 1/2 teaspoon of salt

Method
- Rinse the rice in a strainer under cold water until the water runs clear, then drain.
- In a medium-sized pot, heat the olive oil over medium heat. Add the garlic and cook for 30 seconds.
