Ingredients

  • 1 cup basmati rice
  • 2 tablespoons oil
  • 1 tablespoon chopped garlic
  • 1 tablespoon chopped ginger
  • 1 small onion, chopped
  • 1 small carrot, chopped
  • 1 small capsicum, chopped
  • 1 tablespoon soy sauce
  • 1 tablespoon vinegar
  • 1 teaspoon sugar
  • Salt to taste
  • 2 cups water

Equipment

  • A pressure cooker
  • A chopping board
  • A knife
  • A spoon
  • A measuring cup
  • A frying pan

Method

  1. Wash and soak the rice for 30 minutes.
  2. Heat oil in a pressure cooker, add chopped garlic and ginger, and sauté for a few seconds.
  3. Add chopped onion and sauté until it turns translucent.
  4. Add chopped carrot and capsicum and sauté for 2-3 minutes.
  5. Add soy sauce, vinegar, sugar, and salt to taste, and mix well.
  6. Add soaked rice and sauté for 2-3 minutes.
  7. Add water and mix well.
  8. Cover the pressure cooker and let it cook on high flame for 1 whistle.
  9. Reduce the flame and let it cook for another 5-7 minutes.
  10. Turn off the flame and let the pressure release naturally.
  11. Open the pressure cooker and fluff the rice with a fork.
  12. Your Chinese rice is ready to serve.
