- 1 cup of uncooked white rice
- 2 cups of water
- 1 chicken breast
- 2 tablespoons of vegetable oil

- 1 carrot, peeled and diced
- 1/2 cup of frozen peas
- 2 eggs, lightly beaten
- 2 tablespoons of soy sauce
- Salt and pepper to taste

- A large non-stick skillet or wok

Method
- Rinse the rice in a strainer under running water until the water runs clear. Combine the rice and water in a pot and bring it to a boil. Reduce the heat to low and cover the pot. Cook the rice for 18-20 minutes until it is tender and fluffy.
- While the rice is cooking, cut the chicken breast into small pieces and season with salt and pepper.
- Preheat a large non-stick skillet or wok over medium-high heat. Add 1 tablespoon of vegetable oil to the skillet and swirl to coat the bottom. Add the chicken pieces and cook for 5-6 minutes until they are golden brown and cooked through. Remove the chicken from the skillet and set it aside.
- Add the remaining tablespoon of vegetable oil to the skillet. Add the onion and garlic and cook for 2-3 minutes until they are soft and fragrant.
- Add the diced carrot and frozen peas to the skillet and cook for an additional 3-4 minutes until they are tender.
- Push the vegetables to one side of the skillet and add the beaten eggs to the empty space. Scramble the eggs until they are cooked through and then mix them with the vegetables.
- Add the cooked rice and soy sauce to the skillet and mix everything together until it is well combined.
- Add the cooked chicken to the skillet and stir everything together. Cook for an additional 2-3 minutes until everything is heated through.
- Season with additional salt and pepper if needed.
- Serve the chicken fried rice hot and enjoy!
Notes
This recipe can be easily customized by adding or substituting vegetables, such as broccoli, bell peppers, or mushrooms. You can also use leftover cooked rice instead of cooking a fresh batch.
