For the chicken:- 2 boneless, skinless chicken breasts, chopped into bite-sized pieces
- 1/2 onion, finely chopped
- 2 cloves of garlic, minced
- 1 tablespoon of soy sauce
- 1 tablespoon of cornstarch
- 1 tablespoon of vegetable oil
- 1 cup of rice
- 2 cups of water
- A pinch of salt
- 1/4 cup of soy sauce
- 1/4 cup of rice vinegar
- 2 tablespoons of honey
- 2 tablespoons of grated ginger
- 1 tablespoon of sesame oil
- 1 tablespoon of cornstarch
- 1/4 cup of water

Method
1. Start by cooking the rice. Rinse the rice in cold water until the water runs clear. Add the rice, water, and salt to a saucepan and bring to a boil. Reduce the heat to low, cover, and simmer for around 18 minutes or until the rice is cooked. 2. While the rice is cooking, prepare the chicken. In a mixing bowl, combine the chopped chicken, soy sauce, and cornstarch. Mix well. 3. Heat the vegetable oil in a large skillet over medium-high heat. Add the chopped onion and garlic and sauté for around 2 minutes or until the onion is translucent. 4. Add the chicken to the skillet and cook for around 5-7 minutes or until it's browned and cooked through. 5. While the chicken is cooking, prepare the ginger sauce. In a mixing bowl, whisk together the soy sauce, rice vinegar, honey, grated ginger, sesame oil, cornstarch, and water. 6. Once the chicken is cooked, pour the ginger sauce over the chicken and stir well. Cook for another 2-3 minutes or until the sauce has thickened. 7. Serve the chicken and ginger sauce over the cooked rice.Notes
If you don't have fresh ginger, you can use ground ginger instead. Simply use around 1 teaspoon of ground ginger instead of the 2 tablespoons of grated ginger.
