Ingredients

  • 2 bay leaves
  • 3 cups water

Method

  1. Rinse the rice in cold water until the water runs clear. Soak the rice in cold water for 30 minutes.
  2. Heat the ghee in a heavy-bottomed pot over medium heat. Add the sliced onions and sauté until they are golden brown.
  3. Add the minced garlic and ginger and sauté for another minute.
  4. Add the cinnamon stick, cardamom pods, cloves, and bay leaves, and sauté for a minute until the spices are fragrant.
  5. Drain the rice and add it to the pot. Sauté for 2-3 minutes until the rice is coated in the ghee and spices.
  6. Add the water and salt to taste. Bring the water to a boil.
  7. Reduce the heat to low, cover the pot with a tight-fitting lid, and simmer for 15-20 minutes until the rice is cooked and the water is absorbed.
  8. Turn off the heat and let the rice rest for 5 minutes.
  9. Fluff the rice with a fork and serve hot.
