Description

Matta Rice Kanji is a traditional South Indian dish made from red rice. This dish is commonly served during the monsoon season as it helps to keep the body warm and healthy. Ingredients

  • 1 cup of Matta Rice
  • 4 cups of Water
  • 2 cups of Buttermilk

  • 1/2 tsp of Cumin Seeds
  • 1/2 tsp of Urad Dal
  • 1/2 tsp of Chana Dal
  • 2 Dried Red Chillies
  • A pinch of Asafoetida
  • A few Curry Leaves
  • 2 tbsp of Oil
  • Salt to taste

Equipment

  • A heavy-bottomed pan
  • A wooden spoon
  • A mixing bowl
  • A whisk

Method

  1. Wash the Matta rice thoroughly and soak it in water for 30 minutes.
  2. Drain the water and add the rice to a heavy-bottomed pan along with 4 cups of water.
  3. Cook the rice on medium heat until it is soft and fully cooked.
  4. Once the rice is cooked, use a wooden spoon to mash it slightly.
  5. Add the buttermilk to the rice and mix well.
  6. Heat the oil in a pan and add the mustard seeds, cumin seeds, urad dal, chana dal, dried red chillies, asafoetida, and curry leaves.
  7. Once the mustard seeds start to splutter, add the tempering to the rice mixture and mix well.
  8. Add salt to taste and mix well.
  9. Simmer the kanji for 5 minutes on low heat.
  10. Remove from heat and serve hot.

Notes

Matta Rice Kanji can be served as a standalone dish or as a side dish with other South Indian delicacies. You can also add some cooked vegetables like carrots, beans, or peas to make it more nutritious. Make sure to adjust the consistency of the kanji by adding more or less buttermilk.
