Method

  1. Begin by rinsing the dried red kidney beans in a colander under cold running water. Remove any debris or broken beans.
  2. In a large pot or Dutch oven, heat the Andouille sausage over medium-high heat until browned. Remove the sausage from the pot and set it aside.
  3. Add the diced green bell pepper, onion, celery, and minced garlic to the pot. Sauté for 5-7 minutes or until the vegetables are tender.
  4. Add the dried thyme, dried oregano, bay leaf, salt, and black pepper to the pot. Stir to combine the spices with the vegetables.
  5. Next, add the rinsed red kidney beans and chicken broth to the pot. Stir to combine.
  6. Bring the mixture to a boil, then reduce the heat to low and let the mixture simmer for 1 hour and 30 minutes or until the beans are tender.
  7. While the beans are cooking, prepare the rice according to package instructions.
  8. Once the beans are tender, use a wooden spoon to mash some of the beans against the side of the pot. This will help thicken the mixture.
  9. Add the cooked Andouille sausage back to the pot and stir to combine.
  10. Serve the red beans over the cooked white rice.
