Ingredients

  • 8 oz. dried rice noodles
  • 2 tablespoons vegetable oil
  • 1 onion, sliced
  • 2 cloves garlic, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup broccoli florets
  • 1 cup sliced mushrooms
  • 1 lb. boneless, skinless chicken breast or tofu, cubed
  • 1/2 cup creamy peanut butter
  • 1/4 cup soy sauce
  • 1/4 cup honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon chili garlic sauce
  • 1/4 cup chopped peanuts, for garnish
  • 2 tablespoons chopped fresh cilantro, for garnish

Method

  1. Bring a large pot of water to a boil. Add the rice noodles and cook for 5-7 minutes or until tender. Drain and set aside.
  2. In a wok or large skillet, heat the vegetable oil over high heat. Add the onion and garlic and stir-fry for 1-2 minutes or until fragrant.
  3. Add the red and yellow bell peppers, broccoli, and mushrooms to the wok and stir-fry for 2-3 minutes or until slightly softened.
  4. Add the chicken or tofu to the wok and stir-fry for 4-5 minutes or until cooked through.
  5. In a small bowl, whisk together the peanut butter, soy sauce, honey, rice vinegar, and chili garlic sauce until smooth.
  6. Add the cooked rice noodles to the wok and pour the peanut sauce over the top. Toss everything together until the noodles and vegetables are coated in the sauce. Cook for an additional 2-3 minutes or until heated through.
  7. Divide the satay rice noodles among bowls and garnish with chopped peanuts and cilantro.

Notes

  • This recipe can be easily adjusted to suit your taste. You can add more or less of any vegetable, or even substitute with your favorite veggies.
  • If you like your noodles with a bit of spice, you can add more chili garlic sauce or red pepper flakes to the peanut sauce.
  • If you don't have rice noodles, you can substitute with any other type of noodle or pasta.
