Ingredients

- 1 cup of Basmati Rice - 2 cups of Water - 2 Chicken Breasts (cut into small cubes) - 1 Onion (finely chopped) - 1 Carrot (finely chopped) - 1 cup of Frozen Peas - 2 Garlic Cloves (minced) - 2 Eggs (beaten) - 2 tbsp of Soy Sauce - 1 tsp of Salt - 1 tsp of Black Pepper - 2 tbsp of Oil

- Large non-stick pan - Wooden spoon - Measuring cups and spoons - Knife and chopping board

Method

1. Rinse the rice in cold water and drain. 2. In a pot, add the rice and 2 cups of water, and bring it to a boil. 3. Reduce the heat to low, cover the pot, and simmer for 18-20 minutes or until the rice is cooked. 4. In a large non-stick pan, heat 2 tbsp of oil over medium-high heat. 5. Add the chicken and cook until it is no longer pink, around 5-7 minutes. 6. Add the onions, carrots, garlic, and frozen peas, and cook for another 5 minutes until the vegetables are tender. 7. Push the chicken and vegetables to the side of the pan and add the beaten eggs to the other side of the pan. 8. Scramble the eggs until they are cooked, and then mix them in with the chicken and vegetables. 9. Add the cooked rice to the pan and mix everything together. 10. Add 2 tbsp of soy sauce, 1 tsp of salt, and 1 tsp of black pepper and mix well. 11. Cook for another 5-7 minutes on medium heat, stirring occasionally. 12. Serve hot and enjoy!
