- 1 cup Basmati Rice
- 1 1/2 cups Fresh Coconut Milk
- 1/2 teaspoon Salt (or to taste)
- 2 Green Chillies (slit lengthwise)
- 1 teaspoon Ginger (grated)
- 1 tablespoon Coconut Oil
- 1/2 teaspoon Mustard Seeds
- 1/2 teaspoon Urad Dal
- 1/2 teaspoon Chana Dal
- 1/4 teaspoon Asafoetida
- 1 sprig Curry Leaves
Equipment
- Large pot with lid
- Spatula
- Measuring cups and spoons
Method
- Wash the rice and soak it in water for 30 minutes.
- Drain the water and keep the rice aside.
- Heat the coconut oil in a large pot.
- Add mustard seeds, urad dal, chana dal and asafoetida. Fry for 30 seconds.
- Add slit green chillies, grated ginger and curry leaves. Fry for another 30 seconds.
- Add the soaked rice and fry for a minute.
- Add fresh coconut milk and salt. Mix well.
- Cover the pot with a lid and cook on medium heat for 15-20 minutes, or until the rice is cooked and the coconut milk is absorbed.
- Switch off the flame and let the rice rest for 5 minutes.
- Fluff the rice with a fork and serve hot with your favorite curry or gravy.

- Use fresh coconut milk for the best flavor.
