Ingredients

  • 1 cup Basmati Rice
  • 1 1/2 cups Fresh Coconut Milk
  • 1/2 teaspoon Salt (or to taste)
  • 2 Green Chillies (slit lengthwise)
  • 1 teaspoon Ginger (grated)
  • 1 tablespoon Coconut Oil
  • 1/2 teaspoon Mustard Seeds
  • 1/2 teaspoon Urad Dal
  • 1/2 teaspoon Chana Dal
  • 1/4 teaspoon Asafoetida
  • 1 sprig Curry Leaves

Equipment

  • Large pot with lid
  • Spatula
  • Measuring cups and spoons

Method

  1. Wash the rice and soak it in water for 30 minutes.
  2. Drain the water and keep the rice aside.
  3. Heat the coconut oil in a large pot.
  4. Add mustard seeds, urad dal, chana dal and asafoetida. Fry for 30 seconds.
  5. Add slit green chillies, grated ginger and curry leaves. Fry for another 30 seconds.
  6. Add the soaked rice and fry for a minute.
  7. Add fresh coconut milk and salt. Mix well.
  8. Cover the pot with a lid and cook on medium heat for 15-20 minutes, or until the rice is cooked and the coconut milk is absorbed.
  9. Switch off the flame and let the rice rest for 5 minutes.
  10. Fluff the rice with a fork and serve hot with your favorite curry or gravy.

  • Use fresh coconut milk for the best flavor.
  • You can adjust the amount of green chillies and ginger according to your taste.
  • You can also add some roasted cashews or peanuts for some crunch.
