Ingredients

  • 2 boneless, skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, chopped
  • 1 green bell pepper, chopped
  • 1 cup uncooked rice
  • 2 cups chicken broth
  • 2 tablespoons soy sauce
  • 2 tablespoons oyster sauce
  • 1 tablespoon sesame oil
  • Chopped scallions and cilantro, for garnish

Method

  1. Preheat oven to 375°F.
  2. Mix together garlic powder, onion powder, paprika, dried oregano, dried thyme, salt, and black pepper in a small bowl. Rub the seasoning mixture all over the chicken breasts.
  3. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the chicken breasts and cook until browned on both sides, about 3-4 minutes per side. Remove the chicken from the skillet and set aside.
  4. Add the remaining tablespoon of olive oil to the skillet along with the chopped onion, minced garlic, red bell pepper, and green bell pepper. Cook for 5-7 minutes or until the vegetables are tender.
  5. Add the uncooked rice to the skillet and stir to coat with the vegetables and oil. Cook for 2-3 minutes or until the rice is lightly browned.
  6. Add the chicken broth, soy sauce, oyster sauce, and sesame oil to the skillet and stir to combine. Bring the mixture to a boil.
  7. Transfer the mixture to a medium pot and bring to a boil. Reduce the heat to low and cover the pot with a tight-fitting lid. Cook for 18-20 minutes or until the rice is tender and the liquid has been absorbed.
  8. While the rice is cooking, slice the chicken breasts into thin strips.
  9. Once the rice is cooked, fluff it with a fork and top with the sliced chicken breasts. Garnish with chopped scallions and cilantro.
