Ingredients

  • 2 cups Basmati Rice
  • 1/2 cup chopped Carrots
  • 1/2 cup chopped Beans
  • 1/2 cup Green Peas
  • 1/2 cup chopped Capsicum
  • 1/2 cup chopped Onion
  • 1/2 cup chopped Spring Onion
  • 2 Green Chillies
  • 4-5 Garlic cloves
  • 1/4 teaspoon Turmeric Powder
  • 1/4 teaspoon Red Chilli Powder
  • 2 teaspoon Soy Sauce
  • 2 teaspoon Oil
  • Salt as per taste

Equipment

  1. A large pot to cook rice
  2. A wok or a large frying pan
  3. A spatula
  4. A chopping board and a knife

Method

  1. Wash 2 cups of Basmati rice in cold water and soak for 20 minutes.
  2. In the meantime, chop all the vegetables and keep them aside.
  3. Take a large pot, add 4 cups of water and bring it to a boil.
  4. Now, add the soaked Basmati rice and cook for 10 minutes or until the rice is cooked properly.
  5. Once the rice is cooked, drain the water and spread the rice on a flat surface to cool down.
  6. Heat oil in a wok or a large frying pan.
  7. Add chopped garlic and green chilies and sauté for a few seconds.
  8. Add chopped onions and sauté till they turn translucent.
  9. Now, add all the chopped vegetables and sauté for 5 minutes.
  10. Add salt, turmeric powder, and red chili powder and mix well.
  11. Add cooked rice and mix well.
  12. Finally, add soy sauce and mix well.
  13. Garnish with chopped spring onion and serve hot.

Notes

  • You can also add other vegetables of your choice like corn, cabbage, etc.
  • If you want to make it spicy, you can add more green chilies or red chili powder.
  • Make sure that the rice is cooled down completely before adding it to the vegetables.
