Equipment

  • A mixing bowl
  • A pan or kadhai for frying
  • A wooden spoon or spatula
  • A strainer

Method

Follow these steps to make crispy seedai with rice flour:
  1. Heat a pan and dry roast the sesame seeds, cumin seeds, and dried red chilies for a few minutes until fragrant. Let it cool and grind it into a coarse powder.
  2. In a mixing bowl, add the rice flour, urad dal flour, asafoetida, ground spice powder, salt, and coconut oil. Mix well.
  3. Add water little by little and knead the mixture into a smooth dough. The dough should not be too dry or too sticky.
  4. Divide the dough into small lemon-sized balls.
  5. Heat oil in a pan or kadhai over medium heat.
  6. Take each ball and roll it between your palms to form a smooth ball. Place the balls on a strainer.
  7. Once the oil is hot, gently drop the seedai balls into the oil. Fry the seedai balls in batches until they turn golden brown and crispy.
  8. Remove the seedai from the oil using a slotted spoon and place them on a paper towel to absorb excess oil.
  9. Allow the seedai to cool completely before storing them in an airtight container.

Notes

  • Make sure to fry the seedai on medium heat to ensure that they cook evenly and don't burn.
  • If the dough is too dry, add a little more water. If it is too sticky, add a little more rice flour.
