- 1 bay leaf
- 1 teaspoon salt
- 4 cups water

Method
- Rinse the rice in cold water until the water runs clear. Drain and set aside.
- Heat the ghee or oil in a large frying pan over medium heat. Add the sliced onions and cook until golden brown and caramelized, stirring occasionally, for about 10-15 minutes. Remove from pan and set aside.
- In the same frying pan, add the garlic, cumin seeds, cinnamon stick, cardamom pods, cloves, and bay leaf. Cook for 1-2 minutes or until fragrant.
- Add the rice to the frying pan and stir to coat with the spices. Add 4 cups of water and salt, and bring to a boil.
- Reduce heat to low, cover with a lid, and simmer for 15-20 minutes, or until the rice is cooked and the water has been absorbed.
- Fluff the rice with a fork and add the caramelized onions. Stir gently to combine.
- Remove the bay leaf, cinnamon stick, and cardamom pods before serving.
Notes
- If you don't have access to basmati rice, you can use any long-grain rice.
