For the Rice:- 2 cups of jasmine rice
- 2 1/4 cups of water
- 1 cup of shredded coconut
- 1/2 cup of roasted peanuts
- 1/2 cup of sliced shallots
- 1/2 cup of sliced lemongrass
- 1/2 cup of sliced kaffir lime leaves
- 1/4 cup of sliced galangal
- 1/4 cup of sliced turmeric
- 1/4 cup of sliced ginger
- 1/4 cup of sliced garlic
- 1/4 cup of sliced long beans
- 1/4 cup of sliced carrots
- 1/4 cup of sliced cucumber
- 1/4 cup of sliced cabbage
- 1/4 cup of sliced mint leaves
- 1/4 cup of sliced basil leaves
- 1/4 cup of sliced coriander leaves
- 1/4 cup of sliced lime
- 1/4 cup of sliced chillies
- 1/4 cup of fish sauce
- 1/4 cup of lime juice
- 1/4 cup of palm sugar
Equipment
- A rice cooker or pot
- A large mixing bowl
- A blender or food processor
Method
1. Rinse the jasmine rice and add it to the rice cooker or pot. Add the water and cook until the rice is done.2. While the rice is cooking, prepare the salad. In a blender or food processor, blend the coconut until it's finely shredded.
3. In a large mixing bowl, mix the shredded coconut, roasted peanuts, shallots, lemongrass, kaffir lime leaves, galangal, turmeric, ginger, garlic, long beans, carrots, cucumber, cabbage, mint leaves, basil leaves, coriander leaves, lime, and chillies.
4. In a small mixing bowl, mix the fish sauce, lime juice, and palm sugar until the palm sugar is dissolved.
5. Pour the dressing over the salad and mix well.
6. Serve the salad over the rice and enjoy!
