Description

Liver rice and gravy is a popular dish in many households, especially in the southern part of the United States. This dish is a combination of sautéed liver, rice and savory gravy. It is a delicious and satisfying meal that is perfect for any occasion.

Ingredients:

  • 1 pound of liver
  • 1 cup of long-grain rice
  • 1 medium onion, chopped
  • 2 cloves of garlic, minced
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of all-purpose flour
  • 2 cups of beef broth
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1/2 teaspoon of paprika
  • 1/2 teaspoon of dried thyme
  • 1/4 teaspoon of cayenne pepper

Equipment:

  • A large skillet
  • A medium saucepan
  • A wooden spoon
  • A measuring cup
  • A measuring spoon

Method:

  1. Wash the liver and cut it into small pieces. Pat it dry with paper towels and set it aside.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add the rice and reduce the heat to low. Cover the saucepan and cook the rice for 18-20 minutes or until it is tender.
  3. While the rice is cooking, heat the oil in a large skillet over medium-high heat. Add the onions and garlic and sauté them for 2-3 minutes or until they are soft and translucent.
  4. Add the liver to the skillet and sauté it for 5-7 minutes or until it is browned on all sides.
  5. Sprinkle the flour over the liver and stir it in. Cook for 1-2 minutes or until the flour is lightly browned.
  6. Add the beef broth to the skillet and stir it in. Add the salt, black pepper, paprika, thyme, and cayenne pepper. Stir well.
  7. Reduce the heat to low and simmer the liver and gravy for 10-15 minutes or until the gravy has thickened.
  8. Serve the liver and gravy over the cooked rice.

Notes:

For a healthier option, you can use brown rice instead of white rice. You can also use chicken broth instead of beef broth. If you don't like liver, you can substitute it with chicken or beef.
