Ingredients

  • 1/4 cup of vegetable oil

Method

  1. Wash the rice several times until the water runs clear. Soak the rice in cold water for 30 minutes.
  2. In a mixing bowl, marinate the chicken with yogurt, cumin, coriander, turmeric, chili powder, and salt. Set aside for 30 minutes.
  3. Heat the oil in a frying pan and add the onions. Cook until the onions are golden brown. Remove the onions with a slotted spoon and set aside.
  4. In the same pan, add the chicken and cook until it is browned on all sides. Remove the chicken and set aside.
  5. In a large pot, add the water, bay leaves, cinnamon, and cardamom. Bring to a boil.
  6. Drain the rice and add it to the pot. Add salt to taste. Cook until the rice is almost done, about 10-12 minutes.
  7. Drain the rice and remove the bay leaves and whole spices.
  8. Add the chicken, onions, garlic, and ginger to the pot with the rice. Mix well.
  9. Cover the pot with a lid and cook on low heat for 20-25 minutes.
  10. Remove from heat and let it sit for 5 minutes before serving.
