- 2 cups of cooked rice
- 2 chicken breasts, cut into small pieces
- 1 onion, chopped
- 1 bell pepper, chopped
- 1 carrot, grated
- 2 cloves of garlic, minced
- 1 egg, beaten
- 2 tablespoons of vegetable oil
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- Salt and pepper to taste

- Wok or large frying pan
- Wooden spoon or spatula

- Cooking oil

Method
- Heat the oil in a wok or large frying pan over medium heat.
- Add the chicken and fry until lightly browned.
- Remove the chicken from the pan and set aside.
- Add the onion, bell pepper, carrot, and garlic to the pan and stir-fry for 3-4 minutes until vegetables are tender.
- Move the vegetables to one side of the pan and pour the beaten egg into the other side. Scramble the egg until cooked, then mix the vegetables and egg together.
- Add the cooked rice to the pan and stir-fry for 2-3 minutes, until heated through.
- Add the chicken back into the pan with the vegetables and rice.
- Add the soy sauce, oyster sauce, salt, and pepper to the pan and stir-fry for another 2-3 minutes.
