- 3 cups cooked white rice
- 4 slices bacon, diced
- 1/2 cup diced pineapple
- 1/2 cup diced red bell pepper
- 1/4 cup chopped green onions
- 2 cloves garlic, minced
- 2 tablespoons soy sauce
- 2 tablespoons vegetable oil
- 2 eggs, lightly beaten

Method
- Heat a large skillet or wok over medium-high heat. Add the diced bacon and cook until crispy, about 5 minutes. Remove the bacon from the pan and set aside.
- Add the vegetable oil to the pan and let it heat up for about a minute.
- Add the garlic and cook for 30 seconds, stirring constantly.
- Add the cooked rice, pineapple, red bell pepper, green onions, and soy sauce to the pan. Stir everything together until well combined and cook for another 5-7 minutes, stirring occasionally.
- Push the rice mixture to the sides of the pan to create a well in the center.
- Add the lightly beaten eggs to the well and let them cook for about a minute without stirring.
- Use a cooking spoon to break up the eggs and stir them into the rice mixture.
- Add the cooked bacon back into the pan and stir everything together.
- Cook for another 2-3 minutes or until everything is heated through.
- Remove from heat and serve hot.
