- 1 pound chicken thighs
- 1 cup white rice
- 1 onion, diced

- 2 cups chicken broth
- 1 can black beans, drained and rinsed
- 1/2 cup cilantro, chopped
- 1 lime, juiced

Method
- Season chicken thighs with salt and pepper.
- In a large pot or Dutch oven, heat olive oil over medium-high heat. Add chicken and cook until browned on both sides, about 5 minutes per side. Remove chicken from pot and set aside.
- Add onions and garlic to the pot and cook until onions are translucent, about 3-4 minutes.
- Add red bell pepper and cook for an additional 2 minutes.
- Add cumin, paprika, and chili powder to the pot and cook for 1-2 minutes, stirring constantly.
- Add rice to the pot and stir to combine with the spices and vegetables.
- Add chicken broth to the pot and bring to a boil.
- Reduce heat to low, cover pot, and simmer for 15 minutes.
- Add black beans and cooked chicken to the pot, and stir to combine.
- Cover pot and continue to simmer for an additional 10-15 minutes, or until rice is fully cooked and liquid is absorbed.
- Remove from heat and stir in cilantro and lime juice.
- Serve hot and enjoy!
Notes
