- 2 cups basmati rice
- 4 cups water
- 2 teaspoons salt
- 1/4 teaspoon saffron threads
- 4 tablespoons unsalted butter, melted

Method
- Rinse the rice several times in cold water until the water runs clear. Drain the rice and let it sit for 30 minutes.
- Add the rice to a large pot and add 4 cups of water and 2 teaspoons of salt. Bring to a boil and then reduce the heat to low. Cover and cook for around 15 minutes or until the water has been absorbed.
- Meanwhile, add the saffron threads to the mortar and pestle and grind them into a powder. Add 2 tablespoons of hot water and let the saffron steep for 10 minutes.
- Once the rice has finished cooking, remove the pot from the heat and let it sit for 5 minutes. Fluff the rice with a fork and then pour the melted butter over the top.
- Pour the saffron water over the rice, cover the pot with a clean dish towel and then the lid. Return the pot to the heat and cook on low for around 30 minutes or until the rice has a golden crust on the bottom.
- To serve, use a spatula to loosen the rice from the pot and then place it onto a serving platter. Serve immediately.
Notes
For best results, use a heavy-bottomed pot and do not lift the lid during the cooking process. You can also add thinly sliced potatoes to the bottom of the pot before adding the rice to create a crispy potato crust.Nutrition Info
