- 1 cup rice
- 2 cups water
- 1 cup curd
- 1 tbsp oil
- 1 tbsp mustard seeds
- 1 tbsp urad dal
- 1 tbsp chana dal
- 1 tbsp grated ginger
- 1 tbsp chopped green chillies
- 1 sprig curry leaves
- 2 tbsp chopped coriander leaves
- Salt to taste

- Mixing bowl
- Small pan

Method
- Wash the rice and add it to the pressure cooker.
- Add 2 cups of water and pressure cook the rice for 3 whistles.
- Once the pressure is released, open the cooker and let the rice cool down.
- Add curd to the rice and mix well.
- Add salt to taste and mix again.
- Heat oil in a small pan.
- Add mustard seeds and let them splutter.
- Add urad dal and chana dal and fry until they turn golden brown.
- Add grated ginger, chopped green chillies, and curry leaves and fry for a minute.
- Add the tempering to the curd rice and mix well.
- Garnish with chopped coriander leaves and serve.
Notes
- You can add more or less curd based on your preference.
- If the rice is too hot, wait for it to cool down before adding curd.
- You can also add grated carrots, pomegranate seeds, or chopped cucumber to the curd rice for extra flavor and nutrition.
