Ingredients

  • 1 cup rice
  • 2 cups water
  • 1 cup curd
  • 1 tbsp oil
  • 1 tbsp mustard seeds
  • 1 tbsp urad dal
  • 1 tbsp chana dal
  • 1 tbsp grated ginger
  • 1 tbsp chopped green chillies
  • 1 sprig curry leaves
  • 2 tbsp chopped coriander leaves
  • Salt to taste

Equipment

  • Pressure cooker
  • Mixing bowl
  • Small pan
  • Spatula

Method

  1. Wash the rice and add it to the pressure cooker.
  2. Add 2 cups of water and pressure cook the rice for 3 whistles.
  3. Once the pressure is released, open the cooker and let the rice cool down.
  4. Add curd to the rice and mix well.
  5. Add salt to taste and mix again.
  6. Heat oil in a small pan.
  7. Add mustard seeds and let them splutter.
  8. Add urad dal and chana dal and fry until they turn golden brown.
  9. Add grated ginger, chopped green chillies, and curry leaves and fry for a minute.
  10. Add the tempering to the curd rice and mix well.
  11. Garnish with chopped coriander leaves and serve.

Notes

  • You can add more or less curd based on your preference.
  • If the rice is too hot, wait for it to cool down before adding curd.
  • You can also add grated carrots, pomegranate seeds, or chopped cucumber to the curd rice for extra flavor and nutrition.
