Ingredients

  • Salt to taste
  • 2 tbsp oil
  • A few curry leaves
  • Coriander leaves for garnishing

Equipment

  • A deep-bottomed pan
  • A grater
  • A spatula

Method

  1. Heat oil in a pan and add mustard seeds.
  2. Once the mustard seeds splutter, add urad dal and chana dal.
  3. Stir in the chopped onions, green chilies, and curry leaves and sauté until the onions turn translucent.
  4. Add the grated mango and turmeric powder and mix well.
  5. Cook for 2-3 minutes until the mangoes become soft and tender.
  6. Add cooked rice and salt to taste and mix well until everything is well combined.
  7. Turn off the heat and garnish with coriander leaves.
  8. Serve hot with papads and raita.

Notes

  • You can use any variety of mango for this recipe, but make sure it is ripe and sweet.
  • If you like your food spicier, you can add more green chilies or red chili powder.
  • Make sure the rice is cooked and cooled before adding it to the pan.
