For the mutton marinade:- 500g mutton pieces
- 1 tsp ginger paste
- 1 tsp garlic paste
- 1 tsp red chili powder
- 1 tsp turmeric powder
- 1 tsp coriander powder
- 1 tsp cumin powder
- 1 tsp garam masala powder
- 1/2 cup yogurt
- Salt to taste
- 2 cups basmati rice
- 4 cups water
- 1 bay leaf
- 1 cinnamon stick
- 4 cardamom pods
- 4 cloves
- 2 onions, sliced
- 1 tomato, chopped
- 2 green chilies, chopped
- 1/4 cup oil
- Salt to taste

Method
- Clean and wash the mutton pieces thoroughly. Drain the water and keep it aside.
- In a bowl, mix all the ingredients for the mutton marinade. Add in the mutton pieces and mix well. Cover and marinate for at least 30 minutes.
- Wash the rice and soak it for 30 minutes.
- In a large pot, heat the oil over medium heat. Add in the sliced onions and fry until golden brown. Add in the chopped tomatoes and green chilies and fry for another 2 minutes.
- Add in the marinated mutton pieces and fry for 10 minutes, stirring occasionally.
- Add in 4 cups of water and bring it to a boil. Reduce the heat and let it simmer for 30 minutes or until the mutton is tender.
- In another pot, heat 4 cups of water over medium heat. Add in the soaked rice, bay leaf, cinnamon stick, cardamom pods, and cloves. Bring it to a boil and let it cook until the rice is 80% done. Drain the water and keep it aside.
- Layer the cooked mutton and rice in a large pot, starting and ending with the rice. Cover the pot with a tight-fitting lid and cook over low heat for 10-15 minutes until the rice is fully cooked.
- Switch off the heat and let the rice sit for 10 minutes before serving.
- Garnish with fresh coriander leaves and serve hot with raita or salad.
