Method

1. Rinse the rice and soak it in water for 20 minutes. 2. Heat the clay pot over medium heat and add the vegetable oil. 3. Add the garlic, ginger, and scallions and sauté for 1 minute. 4. Add the diced chicken or pork and sauté until browned. 5. Add the soy sauce, oyster sauce, sesame oil, salt, and pepper to the pot and mix well. 6. Drain the rice and add it to the pot along with 1 cup of water. 7. Cover the pot with a lid and cook over low heat for 20-25 minutes. 8. Check the rice and stir occasionally to prevent burning. 9. Once the rice is cooked and the liquid has been absorbed, turn off the heat and let it sit for 5 minutes before serving.
