Ingredients

  • 2 cups glutinous rice
  • 2 cups water
  • 1 1/2 cups coconut milk

  • 5-6 pandan leaves, tied in a knot

  • Cheesecloth

Method

  1. Wash the glutinous rice and soak it in water for at least 30 minutes.
  2. In a large pot, combine the coconut milk, brown sugar, salt, and pandan leaves. Heat the mixture over medium heat until the sugar dissolves, stirring occasionally.
  3. Remove the pandan leaves from the mixture and set them aside.
  4. Drain the glutinous rice and add it to the pot with the coconut milk mixture. Stir to combine.
  5. Place the pandan leaves on top of the rice mixture.
  6. Cover the pot with a cheesecloth and steam the rice mixture over medium heat for 20-25 minutes or until the rice is fully cooked.
  7. Remove the pot from the heat and let it sit for 5 minutes.
  8. Remove the pandan leaves from the rice mixture and discard them.
  9. Fluff the rice with a fork and transfer it to a serving dish.
  10. Serve the pandan glutinous rice warm or at room temperature.

Notes

  • If you don't have a steamer basket, you can use a colander instead.
  • You can also use pandan extract instead of pandan leaves. Use 1 tsp of pandan extract for this recipe.
