Method
- Wash the glutinous rice and soak it in water for at least 30 minutes.
- In a large pot, combine the coconut milk, brown sugar, salt, and pandan leaves. Heat the mixture over medium heat until the sugar dissolves, stirring occasionally.
- Remove the pandan leaves from the mixture and set them aside.
- Drain the glutinous rice and add it to the pot with the coconut milk mixture. Stir to combine.
- Place the pandan leaves on top of the rice mixture.
- Cover the pot with a cheesecloth and steam the rice mixture over medium heat for 20-25 minutes or until the rice is fully cooked.
- Remove the pot from the heat and let it sit for 5 minutes.
- Remove the pandan leaves from the rice mixture and discard them.
- Fluff the rice with a fork and transfer it to a serving dish.
- Serve the pandan glutinous rice warm or at room temperature.
Notes
- If you don't have a steamer basket, you can use a colander instead.
