- 3 cups Rice Bubbles
- 1 and 1/2 cups Self-raising Flour
- 1/2 cup Desiccated Coconut
- 1/2 cup Caster Sugar
- 1/2 cup Melted Butter
- 1/2 cup Milk
- 2 Eggs
- 1 tsp Vanilla Extract
- 1/4 tsp Salt
- Food Coloring (Optional)

Method
- Preheat the oven to 180°C/350°F and line a cupcake tin with cupcake liners.
- In a mixing bowl, combine Rice Bubbles, self-raising flour, desiccated coconut, caster sugar, and salt.
- In a separate mixing bowl, whisk together melted butter, milk, eggs, and vanilla extract. If you want to add food coloring, add it to the wet mixture at this point.
- Pour the wet mixture into the dry mixture and mix until well combined.
- Scoop the mixture into the cupcake liners, filling them about 3/4 of the way full.
- Bake in the preheated oven for 20-25 minutes or until the tops of the cupcakes are golden brown.
- Remove from the oven and allow to cool for 5 minutes before transferring the cupcakes to a wire rack to cool completely.
