Ingredients

  • 1 kg mutton or lamb meat, cut into pieces

  • 1 tbsp garlic paste
  • 1 tbsp red chili powder
  • 1 tbsp coriander powder
  • 1 tsp cumin powder
  • 1 tsp garam masala powder
  • 1 tsp turmeric powder
  • 4 green cardamom pods
  • 4 cloves
  • 1 cinnamon stick
  • 4 tbsp ghee
  • Salt to taste
  • 4 cups water
  • Fresh coriander leaves, chopped

Method

  1. In a large mixing bowl, combine the mutton, yogurt, ginger paste, garlic paste, red chili powder, coriander powder, cumin powder, garam masala powder, turmeric powder, and salt. Mix well to coat the meat evenly. Cover the bowl with plastic wrap and marinate in the refrigerator for at least 2 hours, or overnight for best results.
  2. When ready to cook, add the ghee to the rice cooker and turn it on. Once the ghee has melted, add the sliced onions and fry until golden brown.
  3. Add the tomatoes and cook until they are soft and mushy.
  4. Add the marinated mutton and cook for 5-7 minutes, stirring occasionally.
  5. Add the water and stir well. Close the lid and let it cook for 15 minutes.
  6. Open the lid and add the drained rice. Stir gently to mix with the mutton and spices.
  7. Add the green cardamom pods, cloves, and cinnamon stick. Stir well.
  8. Close the lid and let it cook until the rice is done and the water has been absorbed. This should take around 20-25 minutes.
  9. Once done, switch off the rice cooker and let it rest for 10 minutes.
  10. Open the lid and fluff the biryani with a fork. Garnish with fresh coriander leaves.
  11. Your mutton biryani is now ready to serve. Enjoy with raita and papad.

  • You can adjust the amount of spices according to your taste preference.
  • If you do not have a rice cooker, you can make this recipe in a large pot on the stove. Follow the same steps, but adjust the cooking time and water accordingly.
