  • 1 cup shredded cheddar cheese

Equipment

  • 9x13 inch baking dish

Method

  1. Preheat the oven to 375°F (190°C).
  2. In a large skillet or wok, heat the olive oil over medium heat. Add the diced onion and sauté until soft and translucent, about 5 minutes.
  3. Add the diced bell peppers to the skillet and sauté for an additional 3-4 minutes, until they are tender.
  4. Add the uncooked brown rice to the skillet, along with the vegetable broth, black beans, chili powder, cumin, garlic powder, salt, and black pepper. Stir the ingredients together until they are well combined.
  5. Transfer the rice mixture to a 9x13 inch baking dish, and cover the dish with aluminum foil.
  6. Bake the casserole for 1 hour, or until the rice is tender and the liquid has been absorbed.
  7. Remove the foil from the baking dish and sprinkle the shredded cheddar cheese over the top of the casserole.
  8. Return the casserole to the oven and bake for an additional 5-10 minutes, until the cheese is melted and bubbly.
  9. Remove the casserole from the oven and let it cool for a few minutes before serving.
  10. Garnish with fresh cilantro or parsley, if desired.
