Description

Chinese rice wine, also known as mijiu or huangjiu, is a traditional alcoholic beverage made from fermented glutinous rice. It is commonly used in Chinese cooking to add flavor and fragrance to dishes. The process of making rice wine involves steaming the rice, mixing it with yeast, and allowing it to ferment for several weeks.

Ingredients

  • 1 kg glutinous rice
  • 1 piece wine yeast ball (approximately 3 grams)
  • 1.5 liters water
  • 100 grams rock sugar (optional)

Equipment

  • Cheesecloth

Method

  1. Wash the rice in several changes of water until the water runs clear.
  2. Soak the rice in water for at least 30 minutes.
  3. Drain the rice and transfer it to a steamer basket. Steam for 30-40 minutes until the rice is cooked and tender.
  4. Spread the steamed rice out on a large tray or baking sheet to cool.
  5. Crumble the wine yeast ball into a small bowl and add a tablespoon of warm water. Stir until the yeast is dissolved.
  6. Put the cooled rice into a clean glass jar. Add the dissolved yeast and water to the jar and mix well.
  7. Fill the jar with water, leaving about an inch of space at the top. If using rock sugar, add it now and stir until dissolved.
  8. Cover the jar with a piece of cheesecloth and secure it with a rubber band or string. Place the jar in a warm, dark place and allow it to ferment for 2-3 weeks.
  9. After the fermentation period, strain the rice wine through a fine mesh sieve or cheesecloth to remove any solids.
  10. Transfer the rice wine to a clean bottle or jar and store it in the refrigerator. It will keep for several months.

Notes

  • Be sure to use glutinous rice, which is also known as sticky rice or sweet rice. Regular rice will not work for this recipe.
  • The water used to make the rice wine should be lukewarm, around 30-35°C.
  • The quality of the wine yeast will affect the flavor of the final product. Look for high-quality wine yeast balls at an Asian grocery store.
  • Adding rock sugar is optional, but it will give the rice wine a slightly sweeter taste.
  • Do not use metal containers or utensils when making rice wine, as they can react with the acidity and alter the flavor.
