  3. Add the soaked rice to the pot and saute for a few minutes.
  4. Add 5-6 cups of water to the pot and bring it to a boil.
  5. Add the black pepper, turmeric powder and salt to taste. Mix well.
  6. Lower the heat and let the rice cook for about 30-40 minutes. Keep stirring occasionally to prevent it from sticking to the bottom of the pot.
  7. Once the rice is cooked and has a porridge-like consistency, turn off the heat.
  8. Garnish with some chopped coriander leaves and serve hot.

Notes

Rice Kanji can be enjoyed as a standalone dish or served with some pickle, papad or chutney. You can also add some vegetables like carrots, beans or peas to make it more wholesome.
