Ingredients

For Masala Powder:
  • 2 tbsp Coriander seeds
  • 1 tbsp Cumin seeds

  • 1 tsp Black peppercorns

  • 1 inch Cinnamon stick
  • 2-3 Dry red chilies
  • 1 Star anise
  • 1 Black Cardamom
  • 4-5 Green Cardamom
For Masala Rice:
  • 2 cups Basmati rice
  • 1 Onion, finely chopped
  • 1 Tomato, finely chopped
  • 1 Capsicum, finely chopped
  • 1 Carrot, grated
  • 1/2 cup Green peas
  • 1/2 cup Corn kernels
  • 3-4 tbsp Oil
  • 1 Bay leaf
  • 1/2 tsp Turmeric powder
  • Salt to taste
  • 3-4 cups Water
  • 2 tbsp Coriander leaves, finely chopped

Equipment

  • Grinder
  • Knife

Method

Masala Powder

  1. Dry roast all the spices for masala powder in a pan on low heat until fragrant.
  2. Grind the roasted spices in a grinder to a fine powder.
  3. Masala powder is ready.

Masala Rice

  1. Wash and soak basmati rice in water for 30 minutes.
  2. Heat oil in a pan and add the bay leaf.
  3. Add chopped onions and saute until translucent.
  4. Add chopped tomato and cook until it turns soft.
  5. Add all the chopped vegetables and cook for 2-3 minutes.
  6. Add turmeric powder, salt, and 2 tbsp of masala powder. Mix well.
  7. Add soaked rice and mix gently.
  8. Add water and bring it to a boil.
  9. Cover the pan with a lid and cook on low heat for 15-20 minutes or until the rice is cooked.
  10. Garnish with chopped coriander leaves.
  11. Masala Rice is ready.

  • You can adjust the quantity of masala powder according to your preference.
  • You can add or skip any vegetables of your choice.
