For Masala Powder:- 2 tbsp Coriander seeds
- 1 tbsp Cumin seeds
- 1 tsp Fennel seeds
- 1 tsp Black peppercorns
- 4-5 Cloves
- 1 inch Cinnamon stick
- 2-3 Dry red chilies
- 1 Star anise
- 1 Black Cardamom
- 4-5 Green Cardamom
- 2 cups Basmati rice
- 1 Onion, finely chopped
- 1 Tomato, finely chopped
- 1 Capsicum, finely chopped
- 1 Carrot, grated
- 1/2 cup Green peas
- 1/2 cup Corn kernels
- 3-4 tbsp Oil
- 1 Bay leaf
- 1/2 tsp Turmeric powder
- Salt to taste
- 3-4 cups Water
- 2 tbsp Coriander leaves, finely chopped

Method
Masala Powder
- Dry roast all the spices for masala powder in a pan on low heat until fragrant.
- Grind the roasted spices in a grinder to a fine powder.
- Masala powder is ready.
Masala Rice
- Wash and soak basmati rice in water for 30 minutes.
- Heat oil in a pan and add the bay leaf.
- Add chopped onions and saute until translucent.
- Add chopped tomato and cook until it turns soft.
- Add all the chopped vegetables and cook for 2-3 minutes.
- Add turmeric powder, salt, and 2 tbsp of masala powder. Mix well.
- Add soaked rice and mix gently.
- Add water and bring it to a boil.
- Cover the pan with a lid and cook on low heat for 15-20 minutes or until the rice is cooked.
- Garnish with chopped coriander leaves.
- Masala Rice is ready.
