Ingredients

For the rice balls:
  • 2 cups leftover rice

For the filling:
  • 2 medium-sized potatoes
  • 1 onion, finely chopped
  • 1 teaspoon cumin seeds
  • 1 teaspoon coriander powder
  • 1/2 teaspoon red chili powder
  • Salt to taste
  • 2 tablespoons oil

Method

  1. Peel the potatoes and boil them until they are soft. Mash them using a potato masher and keep aside.

  4. In a large mixing bowl, mix the leftover rice, all-purpose flour, bread crumbs, grated parmesan cheese, egg, salt, and pepper.
  5. Take a small portion of the rice mixture and flatten it on your palm. Add a spoonful of the potato filling in the center and close it to form a ball shape. Repeat the process until all the rice mixture is used up.
  6. Heat oil in a frying pan. Once hot, add the rice balls and fry until they turn golden brown on all sides.
  7. Using a slotted spoon, remove the rice balls from the oil and place them on a plate lined with paper towels to absorb excess oil.
  8. Serve hot with your favorite dipping sauce.

Notes

  • You can also add some chopped green chilies or ginger-garlic paste to the potato filling to make it even more flavorful.
  • Make sure the potato filling is completely cooled down before stuffing it in the rice balls, or it will make the rice mixture sticky and difficult to handle.
