Ingredients

  • 1 whole chicken
  • 2 cups of rice

  • 1 tablespoon of sesame oil
  • 2 tablespoons of oyster sauce
  • 1 tablespoon of sugar
  • 1 cucumber
  • 1 red chili
  • 1 green onion
  • 1 lime

Method

  1. Rinse the chicken and remove any excess fat. Stuff the chicken with garlic and ginger.
  2. Fill a large pot with enough water to cover the chicken. Bring the water to a boil and add the chicken. Cook the chicken for about 20 minutes or until fully cooked.
  3. Remove the chicken from the pot and set it aside to cool. Reserve the chicken broth for cooking the rice.
  4. Wash the rice and add it to the chicken broth. Bring the broth to a boil and cook the rice for about 15 minutes or until fully cooked.
  5. In a saucepan, heat the vegetable oil and sauté the garlic and ginger until fragrant. Add soy sauce, sesame oil, oyster sauce, and sugar. Stir until well combined and set aside.
  6. Chop the cucumber and red chili into small pieces. Slice the green onion thinly. Cut the lime into wedges.
  7. Prepare the ginger sauce by blending or pounding ginger, garlic, and oil into a paste. Add salt to taste.
  8. Prepare the chili sauce by blending or pounding red chili, garlic, and vinegar into a paste. Add salt and sugar to taste.
  9. Once the chicken is cool, chop it into bite-sized pieces.
  10. Arrange the chicken, rice, and vegetables on a plate. Serve with the sauces and lime wedges.

Notes

You can also use chicken thighs or chicken breasts for this dish. Just adjust the cooking time accordingly. You can also add pandan leaves to the rice for added flavor.
