Ingredients

The ingredients you will need for this recipe are: - 1 whole duck, cleaned and dressed - 2 cups of long-grain rice - 3 cups of chicken stock - 1 onion, diced - 2 cloves of garlic, minced - 1 cinnamon stick - 2 star anise - 1 tablespoon of dark soy sauce - 1 tablespoon of light soy sauce - 2 tablespoons of oyster sauce - 1 teaspoon of sugar - Salt and pepper to taste - 2 tablespoons of vegetable oil

Equipment

Method

1. Preheat the oven to 375°F. 2. Place the duck in a large roasting pan and season it with salt and pepper. 3. Roast the duck in the oven for 1 1/2 to 2 hours, or until the skin is crispy and the meat is cooked through. 4. Remove the duck from the oven and let it rest for 10 minutes. 5. While the duck is resting, rinse the rice under cold water until the water runs clear. 6. Heat the oil in a large pot over medium heat. 7. Add the onion and garlic and cook until they are soft and fragrant. 8. Add the rice to the pot and stir to combine. 9. Add the chicken stock, cinnamon stick, star anise, dark soy sauce, light soy sauce, oyster sauce, sugar, salt, and pepper to the pot and stir to combine. 10. Bring the mixture to a boil and then reduce the heat to low. 11. Cover the pot with a lid and let the rice simmer for 20-25 minutes, or until the rice is tender and the liquid has been absorbed. 12. Remove the cinnamon stick and star anise. 13. Carve the duck meat and serve it alongside the rice.
