Ingredient

For Sambar Masala
  • 1 tbsp coriander seeds
  • 1 tsp cumin seeds
  • 1 tsp fenugreek seeds
  • 1 tsp black peppercorns
  • 1 tsp mustard seeds
  • 5-6 dry red chillies
  • 1 tbsp chana dal
  • 1 tbsp urad dal
  • 1 tsp turmeric powder
  • 1 tsp asafoetida powder
  • 1 tbsp grated coconut
For Sambar
  • 1 cup toor dal
  • 2 cups mixed vegetables (carrots, beans, drumsticks, brinjal, pumpkin)
  • 1 small onion, chopped
  • 1 small tomato, chopped
  • 1 tbsp tamarind pulp
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • 2-3 dried red chillies
  • 1 sprig curry leaves
  • 2 tbsp oil
  • 1 tsp salt

Method

Step 1: Preparing the Sambar Masala

1. Heat a pan and dry roast coriander seeds, cumin seeds, fenugreek seeds, black peppercorns, mustard seeds, dry red chillies, chana dal, and urad dal until fragrant and slightly browned. 2. Add turmeric powder, asafoetida powder, and grated coconut to the pan and roast for 2-3 minutes. 3. Let the mixture cool down and grind it to a fine powder in a blender.

Step 2: Cooking the Sambar

1. Wash and soak the toor dal for 10 minutes. 2. Pressure cook the dal with 2-3 cups of water for 3-4 whistles. 3. Heat oil in a heavy-bottomed pan and add mustard seeds, urad dal, and dried red chillies. 4. Once the mustard seeds splutter, add chopped onions and sauté until translucent. 5. Add mixed vegetables and sauté for 2-3 minutes. 6. Add chopped tomatoes and cook until they turn mushy. 7. Add tamarind pulp, sambar masala, and salt to the pan and mix well. 8. Add 2-3 cups of water and let the mixture come to a boil. 9. Add the cooked dal to the pan and mix well. 10. Let the sambar simmer for 10-15 minutes until the vegetables are cooked and the mixture thickens. 11. Garnish with curry leaves and serve hot with rice.

Notes

  • You can adjust the spice level of the sambar by adding or reducing the number of dry red chillies in the masala.
  • You can also use store-bought sambar powder instead of making the masala from scratch.
  • You can add more or fewer vegetables as per your preference.
  • Make sure to soak the dal for at least 10 minutes before cooking to ensure it cooks faster.
