Traditionally, rice pudding is made by cooking rice in milk and sugar until it becomes thick and creamy. However, with the help of an Instant Pot, you can make this dish in no time at all.

Prep Time

The prep time for this recipe is minimal. It should take you around 10 minutes to gather all of the necessary ingredients and prepare them for cooking.

Cook Time

The cook time for this recipe is approximately 30 minutes. However, this may vary depending on the type of Instant Pot that you are using.

Ingredients

  • 1 cup of white rice
  • 2 cups of water
  • 2 cups of whole milk
  • 1/2 cup of granulated sugar
  • 1 tablespoon of vanilla extract
  • 1/2 teaspoon of ground cinnamon
  • 1/4 teaspoon of ground nutmeg
  • 1/4 teaspoon of salt
  • 1/2 cup of raisins (optional)

Equipment

  • Instant Pot
  • Measuring cups and spoons
  • Wooden spoon
  • Bowl

Method

  1. Rinse the rice in cold water and drain well.
  2. Add the rice, water, milk, sugar, vanilla extract, cinnamon, nutmeg, and salt to the Instant Pot. If you are adding raisins, add them at this time as well.
  3. Stir the ingredients together until well combined.
  4. Put the lid on the Instant Pot and set the valve to sealing.
  5. Press the "Manual" button and set the timer for 20 minutes.
  6. After 20 minutes, let the pressure release naturally for 10 minutes.
  7. After 10 minutes, carefully turn the valve to venting to release any remaining pressure.
  8. Remove the lid and give the rice pudding a good stir.
  9. If the pudding is too thick, add a little bit of milk to thin it out.
  10. Serve the rice pudding warm or chilled.

Notes

  • Be sure to rinse the rice before cooking it to remove any excess starch.
  • Letting the pressure release naturally for 10 minutes will help prevent the rice pudding from becoming too thick.
  • If you prefer your rice pudding to be more sweet, you can add additional sugar to taste.
