- 1 whole chicken, cut into pieces
- 2 tablespoons of garlic, minced
- 2 tablespoons of ginger, minced
- 1 tablespoon of cumin
- 1 tablespoon of paprika
- 1 tablespoon of salt
- 1 tablespoon of black pepper
- 1/4 cup of white vinegar
- 1/4 cup of soy sauce
- 2 tablespoons of yellow Peruvian chili paste (Aji Amarillo)
- 1 tablespoon of vegetable oil
- 1 onion, chopped
- 2 cups of rice
- 4 cups of water
- 1 tablespoon of salt

Method
- In a bowl, mix garlic, ginger, cumin, paprika, salt, black pepper, white vinegar, soy sauce, and yellow Peruvian chili paste (Aji Amarillo) to make the marinade.
- Add chicken to the marinade and mix well. Marinate for at least 30 minutes or overnight in the refrigerator.
- Heat a large skillet over medium heat. Add vegetable oil and saute onion until it becomes translucent.
- Add marinated chicken to the skillet and cook for 25 minutes or until fully cooked.
- While the chicken is cooking, rinse rice with cold water and drain.
- In a pot, add rice, water, and salt. Bring to a boil and reduce heat to low. Cover and simmer for 18-20 minutes or until the rice is fully cooked.
- Once the chicken is fully cooked, remove from heat and let it rest for 5 minutes.
- Fluff the rice with a fork and serve hot with the chicken.
Notes
Make sure to marinate the chicken for at least 30 minutes or overnight in the refrigerator to get the best flavor. You can also use chicken thighs instead of a whole chicken. Don't forget to rinse the rice with cold water before cooking to remove excess starch.Nutrition Info
