Description

Sambar is a traditional South Indian lentil-based soup that is popularly served with rice. It is a flavorful and nutritious dish that is easy to make and loved by all age groups. In this recipe, we will be using a combination of vegetables, lentils, and spices to make a delicious sambar that pairs perfectly with steamed rice.

Ingredients

  • 1 cup of toor dal (split pigeon peas)
  • 2 cups of mixed vegetables (carrots, beans, eggplant, drumstick, pumpkin, etc.)
  • 1 onion, chopped
  • 2 tomatoes, chopped
  • 1 tablespoon of tamarind paste
  • 2 tablespoons of sambar powder
  • 1 teaspoon of turmeric powder
  • Salt to taste
  • Water as required
  • 2 tablespoons of oil
  • 1 teaspoon of mustard seeds
  • 1 teaspoon of cumin seeds
  • 2-3 dry red chilies
  • A few curry leaves
  • A pinch of asafoetida
  • Coriander leaves for garnish

Equipment

  • A pressure cooker
  • A pan
  • A wooden spoon
  • A knife and chopping board

Method

  1. Wash the toor dal and soak it in water for 10-15 minutes.
  2. Chop the vegetables into bite-sized pieces.
  3. In a pressure cooker, add the toor dal, vegetables, chopped onions, chopped tomatoes, tamarind paste, sambar powder, turmeric powder, salt, and water.
  4. Cook for 4-5 whistles or until the dal and vegetables are soft and mushy.
  5. Mash the dal and vegetables with a wooden spoon and mix well.
  6. Heat oil in a pan and add mustard seeds.
  7. When the mustard seeds start to splutter, add cumin seeds, dry red chilies, curry leaves, and asafoetida.
  8. Sauté for a few seconds and pour the tempering over the sambar.
  9. Garnish with coriander leaves.
  10. Serve hot with steamed rice.

Notes

  • You can add any vegetables of your choice to the sambar.
  • If you do not have tamarind paste, you can use lemon juice instead.
  • You can adjust the amount of sambar powder and spices as per your taste.
  • Make sure to mash the dal and vegetables well to get a smooth consistency.
