- 1 cup of toor dal (split pigeon peas)

- 2 tomatoes, chopped
- 1 tablespoon of tamarind paste
- 2 tablespoons of sambar powder
- 1 teaspoon of turmeric powder
- Salt to taste
- Water as required
- 2 tablespoons of oil
- 1 teaspoon of mustard seeds
- 1 teaspoon of cumin seeds
- 2-3 dry red chilies
- A few curry leaves
- A pinch of asafoetida
- Coriander leaves for garnish
Equipment
- A pressure cooker
- A pan
- A wooden spoon
- A knife and chopping board
Method
- Wash the toor dal and soak it in water for 10-15 minutes.
- Chop the vegetables into bite-sized pieces.
- In a pressure cooker, add the toor dal, vegetables, chopped onions, chopped tomatoes, tamarind paste, sambar powder, turmeric powder, salt, and water.
- Cook for 4-5 whistles or until the dal and vegetables are soft and mushy.
- Mash the dal and vegetables with a wooden spoon and mix well.
- Heat oil in a pan and add mustard seeds.
- When the mustard seeds start to splutter, add cumin seeds, dry red chilies, curry leaves, and asafoetida.
- Sauté for a few seconds and pour the tempering over the sambar.
- Garnish with coriander leaves.
- Serve hot with steamed rice.
Notes
- You can add any vegetables of your choice to the sambar.
- If you do not have tamarind paste, you can use lemon juice instead.
- You can adjust the amount of sambar powder and spices as per your taste.
- Make sure to mash the dal and vegetables well to get a smooth consistency.
