Ingredients

-1 cup of long-grain white rice -1 can of red kidney beans -1/2 cup of sofrito (pre-made or homemade) -2 cloves of garlic, minced -1 tsp of salt -1 tsp of cumin -1 tsp of oregano -1/4 tsp of black pepper -2 cups of water -2 tbsp of olive oil

Method

1. Rinse rice in a colander and set aside. 2. In a large skillet, heat olive oil over medium heat. 3. Add garlic and sofrito to the skillet and sauté for 2-3 minutes. 4. Add the rice to the skillet and stir to combine with the sofrito and garlic. 5. Add the water, salt, cumin, oregano, and black pepper to the skillet and stir to combine. 6. Bring the mixture to a boil, then reduce heat to low and cover the skillet with a lid. 7. Allow the rice to cook for about 20-25 minutes, or until the water has been absorbed and the rice is cooked. 8. Drain and rinse the beans in a colander. 9. Add the beans to the skillet with the rice and stir to combine. 10. Cover the skillet and cook for an additional 10-15 minutes, or until the rice and beans are heated through.

Notes

-If you don't have sofrito on hand, you can make your own by blending together onions, peppers, garlic, and cilantro in a food processor. -You can also add additional seasonings to the dish, such as adobo or sazón, to taste.
