Ingredients

  • 2 cups of jasmine rice
  • 1 pound of mixed seafood (shrimp, squid, and mussels)
  • 1 cup of mixed vegetables (carrots, bell peppers, and snow peas)
  • 4 cloves of garlic, minced
  • 1 tablespoon of ginger, minced
  • 2 tablespoons of vegetable oil
  • 2 tablespoons of soy sauce
  • 1 tablespoon of oyster sauce
  • 1 tablespoon of sesame oil
  • 3 cups of chicken broth
  • 2 green onions, chopped

Method

  1. Rinse the rice in a large bowl until the water runs clear. Drain the rice and set it aside.
  2. Heat the claypot over medium-high heat and add the vegetable oil.
  3. Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
  4. Add the mixed vegetables and stir-fry for 2-3 minutes until slightly softened.
  5. Add the mixed seafood and stir-fry for 2-3 minutes until the shrimp turn pink.
  6. Add the rice, soy sauce, oyster sauce, and sesame oil to the claypot and stir well.
  7. Pour in the chicken broth and stir gently.
  8. Cover the claypot with a lid and bring the mixture to a boil over high heat.
  9. Reduce the heat to low and let the mixture simmer for 20-25 minutes until the rice is fully cooked.
  10. Once the rice is cooked, sprinkle the chopped green onions on top and serve.

Notes

  • You can use any type of seafood or vegetables you prefer in this dish.
  • If you don't have a claypot, you can use a regular pot or Dutch oven.
  • Make sure to stir the rice occasionally while it's cooking to prevent it from sticking to the bottom of the pot.
