- 2 cups of jasmine rice
- 1 pound of mixed seafood (shrimp, squid, and mussels)
- 1 cup of mixed vegetables (carrots, bell peppers, and snow peas)
- 4 cloves of garlic, minced
- 1 tablespoon of ginger, minced
- 2 tablespoons of vegetable oil
- 2 tablespoons of soy sauce
- 1 tablespoon of oyster sauce
- 1 tablespoon of sesame oil
- 3 cups of chicken broth
- 2 green onions, chopped

Method
- Rinse the rice in a large bowl until the water runs clear. Drain the rice and set it aside.
- Heat the claypot over medium-high heat and add the vegetable oil.
- Add the garlic and ginger and stir-fry for 30 seconds until fragrant.
- Add the mixed vegetables and stir-fry for 2-3 minutes until slightly softened.
- Add the mixed seafood and stir-fry for 2-3 minutes until the shrimp turn pink.
- Add the rice, soy sauce, oyster sauce, and sesame oil to the claypot and stir well.
- Pour in the chicken broth and stir gently.
- Cover the claypot with a lid and bring the mixture to a boil over high heat.
- Reduce the heat to low and let the mixture simmer for 20-25 minutes until the rice is fully cooked.
- Once the rice is cooked, sprinkle the chopped green onions on top and serve.
Notes
- You can use any type of seafood or vegetables you prefer in this dish.
- If you don't have a claypot, you can use a regular pot or Dutch oven.
- Make sure to stir the rice occasionally while it's cooking to prevent it from sticking to the bottom of the pot.
