Add the chopped onions and fry until they are golden brown. 4. Add the ginger-garlic paste and fry for a minute. 5. Add the chopped tomatoes and cook until they are soft and mushy. 6. Add the chopped vegetables, coriander powder, turmeric powder, chili powder, and salt to taste. 7. Mix well and cook for 5 minutes. 8. Add 1/4 cup of water and cook until the vegetables are tender. 9. Blend the mixture in a blender until it is smooth. 10. Return the mixture to the frying pan and add the coconut milk. 11. Mix well and cook for a few minutes. 12. Serve the kurma with the ghee rice.
