- 1 tsp red chili powder

- 2 tbsp oil
- Salt to taste

Method
- Heat oil in a pressure cooker and add cumin and fennel seeds. Allow them to splutter.
- Add chopped onions and ginger-garlic paste to the pressure cooker and sauté until the onions turn translucent.
- Add chopped tomatoes and cook until the tomatoes turn mushy.
- Add mixed vegetables, coriander powder, red chili powder, turmeric powder, and salt to the pressure cooker. Mix well.
- Add 1 cup of water to the pressure cooker and mix well.
- Cover the pressure cooker with a lid and cook for 2 whistles.
- Allow the pressure to release naturally and then open the lid.
- Blend grated coconut and 1/4 cup of water in a blender to make a smooth paste.
- Add the coconut paste to the pressure cooker and mix well.
- Cook the gravy for 5 minutes on low flame and switch off the heat.
- Garnish with coriander leaves and serve hot with steamed rice.
Notes
- You can use any vegetables of your choice to make this dish.
- The consistency of the gravy can be adjusted by adding more or less water.
- You can also add cashews while blending the coconut to make the gravy creamier.
- If you do not have a pressure cooker, you can also make this dish in a pan by cooking the vegetables until they are soft and then adding the coconut paste.
