Ingredients

  • 1 cup mixed vegetables (carrots, beans, peas, cauliflower, and potatoes)

  • 1 tsp ginger-garlic paste
  • 1 tsp cumin seeds
  • 1 tsp fennel seeds
  • 1 tsp coriander powder
  • 1 tsp red chili powder
  • 1/2 tsp turmeric powder
  • 1/2 cup grated coconut
  • 2 tbsp oil
  • Salt to taste
  • Coriander leaves for garnishing

Equipment

  • A pressure cooker
  • A blender

Method

  1. Heat oil in a pressure cooker and add cumin and fennel seeds. Allow them to splutter.
  2. Add chopped onions and ginger-garlic paste to the pressure cooker and sauté until the onions turn translucent.
  3. Add chopped tomatoes and cook until the tomatoes turn mushy.
  4. Add mixed vegetables, coriander powder, red chili powder, turmeric powder, and salt to the pressure cooker. Mix well.
  5. Add 1 cup of water to the pressure cooker and mix well.
  6. Cover the pressure cooker with a lid and cook for 2 whistles.
  7. Allow the pressure to release naturally and then open the lid.
  8. Blend grated coconut and 1/4 cup of water in a blender to make a smooth paste.
  9. Add the coconut paste to the pressure cooker and mix well.
  10. Cook the gravy for 5 minutes on low flame and switch off the heat.
  11. Garnish with coriander leaves and serve hot with steamed rice.

Notes

  • You can use any vegetables of your choice to make this dish.
  • The consistency of the gravy can be adjusted by adding more or less water.
  • You can also add cashews while blending the coconut to make the gravy creamier.
  • If you do not have a pressure cooker, you can also make this dish in a pan by cooking the vegetables until they are soft and then adding the coconut paste.
